In folk traditions, cabbage pickling has always been an important event, which was approached with special attention. One of the key reference points was the lunar calendar and religious dates. It was believed that after this date cabbage acquired the best properties for pickling and fermentation was more successful.

Wednesday, Friday and Saturday were considered unsuitable days for pickling cabbage, as these ‘feminine’ days of the week were not conducive to a good souring process. The best time for this is on the waxing Moon. During this period, fermentation processes are particularly successful, which guarantees crisp and tasty cabbage. It is recommended to pick the vegetable for souring on the waning Moon, when its properties are most suitable for further preparation.

When not to sauerkraut

At the same time, it is strictly forbidden to sour and pickle cabbage during the periods of new and full moons. The ideal days are the 5th-6th day after the new moon or the first week after the full moon. An important rule is to avoid pickling in the days before and after the new and full moons, as well as in those days when the Moon passes through the constellations Virgo, Cancer or Pisces, as this can negatively affect the fermentation process.

How is sauerkraut useful?

Sauerkraut is not only a popular product, but also has many useful properties. It has an anti-inflammatory effect, strengthening the immune system. During the fermentation process, cabbage becomes a rich source of vitamins, especially vitamin C, which protects the body from infections, and vitamin K, important for bone health. In addition, thanks to the probiotics that are formed during fermentation, sauerkraut improves the digestive system, normalising the intestinal flora and supporting the overall health of the body.

Thus, observing folk traditions and lunar phases when pickling cabbage not only improves the flavour of the product, but also makes it even healthier.
